The typical grape varieties used for Vin Santo in Tuscany are Trebbiano and Malvasia. The Badia di Morrona Vin Santo however also uses Colombana, a typical grape of this area. It is produced in the most traditional way, leaving the grapes to dry on reed mats until February to significantly increase the sugar concentration due to the loss of water. The must is then aged in 110-litre oak barrels for at least four years.

In the splendid setting between Pisa and Volterra, Badia di Morrona boasts a 600-hectare estate, where cypress, holm oak, and oak forests give way to 40 hectares of olive groves and, most importantly, 110 hectares of vineyards that climb the gentle slopes along the Cascina River, between the municipalities of Terricciola and Casciana Terme Lari.
