Chalkdown Wine, Hampshire

A small, independent winemakers, dedicated to creating unique and delicious English sparkling wines from their winery in Hampshire.

Piotr is their winemaker, He has been studying wine for nearly twenty years and making it for the last ten. He has judged at competitions in France and done much personal market research. Piotr says of his approach to wine-making: “ I remain hungry to learn and always self critical. Hopefully, my work and that of the rest of the team has created a beautiful finished product that you will love”.

Chalkdown Classic Cuvee Non Vintage: £31.00 per bottle*

The wine is well rounded and generous with warm stone fruit (peaches, apricots) and honeysuckle aromas and demonstrates a pronounced autolytic character.  There is a refreshing green apple acidity that offers lovely freshness and a balancing layer of mineralogy that adds to the complexity on the palate.  

Made from fruit grown in 2021, the Classic Cuvée is crafted from a blend of Pinot Noir (92%) and Chardonnay (8%) grapes.  This combines the structure and generous fruit character of the Pinot with an extra dash of finesse from the Chardonnay to create a classic blend.  The wine was fermented and aged in steel tanks and bottled in April 2022.  It was then left to bottle age on its lees for a minimum of 22 months before dégorgement. 12% abv

SERVING SUGGESTIONS

Lovely on its own as an aperitif or a sundowner and rather nice with traditional fish and chips.  It would also work well with fresh asparagus; cured meats; sushi or tangy cheeses. 

Chalkdown Rose Brut NV : £33.50 per bottle*

This is a delicately coloured English Rosé that has masses of beautiful strawberry and cream flavours with hints of vanilla and summer roses.  The bubbles are delicate and gently complement the elegance of the wine.  

100% Pinot Noir from the 2020 vintage.  The fruit was so nice that we just looked after it carefully in the winery.  It was fermented slowly at low temperatures to maximise the aromatic expression and given 26-29 months on lees; enough the create a soft mouthfeel without losing its freshness. 12.5% abv

Total production was just 3142 bottles.

SERVING SUGGESTIONS

This is just perfect on its own before lunch or dinner, or to mark a special occasion.  It would also make a great accompaniment to canapés; soft cheeses or summer fruit puddings.
