This period commences with 5 days’ cold maceration with the object of extracting the fruit characters from the grapes. And finally, the temperature is raised to around 32°C for 5 to 7 days to stabilise colour and tannins.\u003cbr\u003e\u003cbr\u003eThe wine is aged in oak barrels, of which 15% are new oak, for 10 to 12 months and after light filtration bottling takes place in the moon's waning phase.\u003cbr\u003e\u003cbr\u003eThe Girardin family have benn wine makers for 13 generations, and the domaine developed in the sixties thanks to Jean Girardin, notably with the acquisition of Château de la Charrière. Product Description

Domaine Vincent Girardin, Chateau de la Charriere

The Santenay Charmes is a bright garnet red colour. The nose has floral overtones such as rose , peony or violet , coupled with aromas of red fruits and some notes of liquorice . In the mouth, it is fresh and round and with a good finish.

100% Pinot Noir grown on limestone and clay from 35 year old vines, the grapes are hand harvested and sorted in both the vineyard and on a sorting table in the winery.

After their passage on the sorting table, the grapes are totally destemmed and then macerate for 15 days in vats. This period commences with 5 days’ cold maceration with the object of extracting the fruit characters from the grapes. This is followed by an increase in temperature during which pumping over and punching down liberates the tannins present in the grape skins. And finally, the temperature is raised to around 32°C for 5 to 7 days to stabilise colour and tannins.

The wine is aged in oak barrels, of which 15% are new oak, for 10 to 12 months and after light filtration bottling takes place in the moon's waning phase.
