The grapes, 90% Viura and 10% Malvasia, are double checked before going into the winery with up to 50% of the harvest being rejected if necessary. Slow fermentation follows in new French oak after which the wine spends 3 months on fine lees. (2022 13.5% abv)
The resultIing wine is a bright yellow, very pale wine with a remarkable greenish component. This green hue tells us about the excellent state of conservation of this wine. On the nose it is the most floral vintage that we can remember. Usually, the fresh fruit (especially peaches) is the first thing one notices but this time, fresh fruit lies in the background with notes of green cut hay and citrus, pineapple and apple. The typical spices of the oak lie way in the background but we can expect them to appear more strongly after some time in the bottle.
