At Ochoa, the moment of harvesting varies from vineyard to vineyard with different vineyards and different grape varieties reaching their optimum level of ripeness at different times. Stainless steel tanks of different sizes allows Ochoa to create specific wines from each plot, and makes it easier to control and hand-craft every blend. Fermentations are temperature-controlled, with long macerations and frequent pumping-over to obtain all the colour, aromas and flavours from our grapes.

The oak used to make the barrels was weathered naturally, outdoors, for a minimum of two years. Ochoa wines are matured in ‘medium toast’ barrels and this Reserva is matured in 225 litre American oak casks for over a year, and then in bottle until the wine reaches perfection.

The grape varieties used are Tempranillo (70%) and Cabernet Sauvignon (30%) and the resulting wine is quite tradtitional in style. It has sublime plum and vanilla flavours with a touch of gaminess.
