Cabernet-Sauvignon - 2003 - Paul Cluver Estate

This wine shows typical Cabernet Sauvignon flavours, lots of blackberry and blackcurrant fruit on the nose and a well-integrated toastiness from the oak. The palate is very complex with hints of cedarwood and nuts with a well-structured body, packed with fruit and an aftertaste which is long and lingering.

This wine can be enjoyed young but will gain complexity if cellared a further 4 to 8 years. Due to the cool climate in Elgin the Cabernet Sauvignon is planted on a Northwest-facing slope using specific 163 clones to ensure an earlier ripening. All this is done to ensure that they get optimum ripeness even in the cooler climate of Elgin.

Guided by Dr Paul Clüver, Neurosurgeon, Apple farmer and chairman of Capespan and Vinfruco, the companies whose visionary and pioneering spirit created the foundation for Paul Cluver Wines.

This vision is ably carried by G.M. Paul Clüver junior, and Winemaker Andries Burger, married to one of the Clüver daughters Inge. Andries qualified in viticulture and oenology at Stellenbosch University. Andries Burger’s winegrowing credo is focused on expressing the Elgin Terroir through handcrafted individual wines with fruit intensity, balance and elegance. Dr Clüver’s wife Songvei and daughter Karin are deeply involved with the nurturing and upliftment of the De Rust farming community.
