Candido is a company that is producing some of the best and most varied wines in Puglia. It is supervised by Severino Garofano, the leading 'wine guru' of the region, who is a passionate believer in local varieties. To put his beliefs into practice, he has developed new methods of treating each grape variety to extract the very best from them, both in the vineyard and the winery. The reds are by far and away the leaders here as it is just too hot to easily produce good white wine, although the indigenous Catarrato is the exception that proves the rule.

Pervini - MANDURIA

The Perrucci brothers (better known perhaps as 'Pervini') are the leading lights in the Accaemia de Racemi, which specialises in 'rescuing' run down or soon to be abandoned estates capable of producing top quality fruit - it's as if Ernst Loosen has moved to Puglia! With the help of leading oenologists (as well as Fabrizio Perrucci the resident oenologist) they are all up and running again and making fabulous wine.
