In spite of starting life wanting to be an architect and following the training for some seven years, the rest of my time has been spent in the hospitality business either serving, supplying or consuming its products. I acquired a taste for the better vinous things whilst at university ending up as President of Nottingham University Philoenic Society and as such had to do serious training(!) for the Hepworth Cup against Oxford and Cambridge when we came third!
It became evident that my interest lay in food and wine rather than in architecture so I changed tack and whilst working at Combe House at Gittisham in the latter half of the 1970s I got to know Chris Piper, finally joining the firm in January 2005. I taught wine appreciation for Culm Vale Adult Education until too much red tape got in the way. Currently involved in the shop and office, my wish is to taste wines from off beat areas of both the new and old world, to highlight the multi layered approach of terroir rather than the mono dimensional approach that can result from slavishly following the varietal lines and also to extoll the benefits of Stelvin screw caps - as well as trying to add to my en primeur Bordeaux cellar. | |
