Candido is a company that is producing some of the best and most varied wines in Puglia. It is supervised by Severino Garofano, the leading 'wine guru' of the region, who is a passionate believer in local varieties. To put his beliefs into practice, he has developed new methods of treating each grape variety to extract the very best from them, both in the vineyard and the winery. The reds are by far and away the leaders here as it is just too hot to easily produce good white wine, although the indigenous Catarrato is the exception that proves the rule.

The Riserva is made from Negroamaro and Malvasia Nera and shows all the classic attributes of rich, powerful and dense fruit flavours. Dark plums, almond stones, damson, chocolate and figs are to the fore but with a clean, balanced finish and just a hint of acidity to make this shine with rich foods.
