Gamey, juicy and pungent with hints of wild mushrooms.

These south west-facing vines were planted in 1975, to a density of 4000 per hectare. This plot covers half a hectare and, with a yield of 50 hl per hectare, produces about 3000 bottles. The cuvée is named ‘Donatella’ in memory of Luigi Baudana’s mother.

After the alcoholic fermentation, the wine is racked into a mixture of barriques and 500 litre casks in which it undergoes the malolactic and matures for 12 months. Once assembled the wine is stored for a further few months in tank before bottling. It is released after five or six months in bottle.
