A light, fresh white with a citrus fruitiness and subtle, nutty finish.

John Boutari and Son was founded in Naoussa in northern Greece in 1879, by an enterprising wine and tsipouro merchant, Yannis Boutaris. In 1906, the Boutaris built their Zafiraki Street winery in Naoussa, and started to concentrate on quality Greek regional wines. The two brothers, Yannis and Constantine, who are in charge of the business today, joined the firm in 1965 and started a programme of modernisation and experimentation with the planting of a 'model' (trial) vineyard in Yanncohori, expanding into regional winery investment by building state-of-the-art wineries on Santorini, Crete, and the historic Bamiadaki estate near Archannes. The Boutari research development is headed by Adelaide graduate Dr Vassilis Marinos and it offers up-to-date, day to day back up and support to the team of growers who supply grapes to the firm. The skill of the Boutaris is to incorporate a high degree of modern wine-making techniques whilst maintaining the individuality and regionality of each of their wines, continuing to use indigenous grape varieties.

The Peloponnese peninsula and its surrounding islands are the source of some of Greece's best dry white wines, the Cyclades having had a tradition of wine making since the Venetians occupied the island in the 15th century. Using ungrafted Assyrtiko grapes which thrive on Santorini's volcanic soil, the Boutari brothers have produced a super-fresh white with soft, lime-fresh fruit and a slightly nutty finish.
