
Pedro Ximénez is the grape that puts the sweetness into sherry as it is blended with the much drier Palomino Fino to produce medium dry and sweet sherries. In its pure form it is intensely sweet and is traditionally drunk wither with or over a dessert.
Characteristics: Like drinking liquid and very sweet plums.
Where is it found? Jerez and Sanlucar de Barrameda
Wines associated: Sweeter sherries
Food matches: Pour over good vanilla ice cream, fruit tarts
