Furmint's tendency to rot has been taken full advantage of by the wily old Hungarians who realised that a late harvested grape with loads of sugar, a high acidity and tremendous extraction of flavours would make great dessert wines. Because of the terrific balance, these are wines that last just about forever, maturing into things of great beauty.
Characteristics: Richly sweet with a fine balancing acidity and pungent fruitiness.
Where is it found? Tokaj (Hungary), Crimea
Wines associated: Tokaji Azsu
Food matches: Blue cheese, creamy dessert
