It is difficult to generalise which wine best goes with game as there is a wide spectrum of flavours to deal with. Red burgundy would be a good choice with just about anything that flew for a living and the longer the bird was hung then the more mature the wine should be. Other matches that work well are rabbit and Chianti, big South American Syrah with jugged hare and meaty Australian Cabernets with venison.
Côtes du Rhône, 2005 - Domaine Roche Audran
Wonderful Côtes du Rhône from the Domaine Roche-Audran in the Visan area west of Gigondas. Intensely fleshy, generous and full-bodied red packed with mulberry spice and damson fruit. Drink 2007 to 2010.
The highly motivated and energetic Vincent Rochette is only in his early 30s but has already made a name for himself for his superbly sculpted Visans and Côtes du Rhônes. He owns land in both the communes of Visan and Buisson and this diversity of terroirs largely explains the extraordinary complexity in his wines. Very careful selection is carried out in the vineyards and in the winery and minimum intervention is used during the fermentation and ageing processes.
Heathcote Shiraz, Limited Release, 2004 - Brown Brothers, Victoria, Australia
A deep brilliant ruby red colour, this medium-bodied wine exhibits aromas of cherry and plum fruits interwoven with subtle oak, spice and pepper. The aromas follow through to the palate which has rich fruit intensity with lingering flavours of pepper and spice, balanced oak treatment, good acidity and fine tannins. The wine drinks well now, however will gain complexity with 3-5 years cellaring from vintage.
