A soft, light, wonderfully fruity red with raspberry overtones, delicious served slightly chilled.

As with all wine, it is the restricted yields and careful grape selection when picking that distinguish the great from the insipid, and Jean-Charles Pivot is a master viticulturalist. The grapes are hand picked at optimum ripeness, and left in whole bunches. The sheer weight of the fruit and gravity is the only form of crushing - the Maceration Carbonique method of winemaking, which ensures a freshness, youthfulness, and unadulterated "grapiness" impossible to achieve in red wines by conventional methods, where the grape must sees a longer period of skin contact.

This wine is an equal to many Cru Beaujolais, and has a concentration and "gouleyance" that is hard to beat. Packed full of raspberry fruit, with a hint of parma violets and fresh cherry on the nose, it is perfect as a chilled summer glass, or with a wide range of dishes, from salads to the rich sausage based specialities of the region. It is one of the only red wines that will happily wash down an omelette, and not overpower more delicate fish dishes.
