Quincy, Silice De Quincy - 2002 - Domaine Jacques Sallé

With 5 hectares of vines on silex soils Jacques Sallé is committed to producing densely flavoured Sauvignons with overtones of bright citrus flavours. To ensure this he keeps his yields deliberately low and uses a long, slow and cool fermentations to extract maximum complexity in the aromas. Unusually M. Salle vinifies and ages all his white wines in wood which really does add an added dimension to his wines. This multi-layered wine is harvested from 100 year old vines which are managed bio-dynamically. The name Silice is a reference to the Silicium based soil on which the vines grow.

Quincy, along with Reuilly and Menetou-Salon, is always over-shadowed by the more famous vineyards of Sancerre and Pouilly yet, in the right hands, it can produce wines of tremendous vigour and complexity. It is interesting to note that Quincy was the second area to be awarded Appellation Controlle status in 1936 after Chateauneuf-du-Pape.
