Grand Cru St. Emilion
A harmonious and beautifully balanced wine of great finesse.
It is amazing to think that in the early 1980's wine from Château Fleur Cardinale was sold in bulk to negociants who blended it with other mediocre wines to form a generic St. Emilion. Today it is one of the most respected Grand Crus in St. Emilion.
Florence and Dominique Decoster purchased this beautiful 17 hectare domain located in Saint-Etienne de Lisse in May 2001. Dominique Decoster, former owner of the porcelain firm Haviland in Limoges, put an end to his industrial work in order to do a job that is also tightly linked to the soil and luxury : wine. With his wife, he has dramatically improved the quality and the standing of his property. On the advice of wine maker Jean-Luc Thunevin, they have scheduled this year, to have the winery, and the cave rebuilt in an ecological way. The fermenting room will be equipped with small tanks to realize the vinification plot by plot and, moreover, the ageing of the wine will take place in 100% new barrels. In order to select the best of the grapes during the harvest, they also bought a new sorting table, crusher and destemmer.
In the vines, the team works to keep eight bunches per plant maximum. Deleafing is also carried out and the vines are maintained in a traditional way. The grape varieties are Merlot (75%), Cabernet Sauvignon (15%) and Cabernet Franc (10%).
The 1999 is beautifully balanced with a firm but mellow fruitiness with hints of mulberries and a delicate touch of oak
