A truly remarkable Champagne with a toasty fruitiness, excellent balance and incredible length. A Jeroboam of Champagne is the equivalent of 4 bottles.
To be completely different requires remaining true to oneself and ones traditions It is in this spirit that Bollinger has developed a unique champagne: "R.D." or "Recently Disgorged".
The blend is the same as that of "Grande Année" and the R.D. uniqueness lies in its much longer ageing on the lees and - as its name implies - in its recent disgorging.
First created in the early 1960's, R.D. is the outcome of research developed by the House of Bollinger on the ageing of champagne on its lees. Not only does the wine retain its freshness but, through the extra contact with the lees,develops more complexity and subtlety.
Remaining for a minimum of eight years on its lees, the R.D. acquires a greater aromatic complexity and length. On the other hand, the recent disgorging - the date of disgorging is inscribed on the back label - gives the wine an exceptional freshness.
The 1988 vintage was of very good quality. Nothing altered the natural development of the vine, except for a rainy late season which allowed grey rot to develop in some crus of Pinot Noir. The flowering happened between 16th and 21st June. A rigorous sorting out of the grapes allowed Bollinger to bring in grapes in good condition.
The grape supply comes only from grands crus and premiers crus vineyards of Champagne. 16 crus were used in the assemblage of the RD 1990, 67 % from grands crus and 33 % from premiers crus.
The first fermentation was done in small oak casks (205, 225 and 410 litres), lot by lot, cru by cru, grape variety by grape variety. This allows Bollinger to use a very strict selection process. Bollinger only uses old casks (5 years old or older) to ensure that neither tannin or oak flavours are imparted to the wines. This method increases both the aromatic complexity and the ageing capacity of such wines.
The blend of the RD 1988 is composed of 72% Pinot Noir and 28% Chardonnay. After bottling, the second fermentation and the ageing in the cellars are done using a real cork stopper, which ensures a better barrier against oxidisation than the crown cap.
After an extra long ageing on its lees the disgorgement is done by hand. The dosage of RD is light : (Extra Brut).
