Dom Pérignon was a 17th century Benedictine monk who has gone down in history as the person who "invented" Champagne. His name was originally registered by Eugène Mercier. He sold the brand name to Moët & Chandon, which used it as the name for its prestige cuvée, which was first released in 1937.

The Abbey of Hautvillers was one of the oldest Bendictine monasteries in the world, established in the 7th century and the result of a dream that came to Saint Nivard. Ten centuries later, Dom Pierre Pérignon disvcovered a way of putting bubbles into wine and the extraordinary quality of the wine he produced in the secrecy and religious fervour of the Abbey makes him the spiritual father of champagne and one of the greatest visionaries of modern wine-making (he wasn't bad a marketing his product either).

Today Moet & Chandon painstakingly select Pinot Noir and Chardonnay grapes from the choicest vineyard plots which have the very best soils and perfect exposure. They only make Dom Pérignon in the best harvests and thereafter the wine rests on its lees during a long and slow ageing.

Each vintage shows a different side to Dom Pérignon, reflecting an assemblage that is a unique creation of the wine maker Richard Geoffroy. In its constant quest for the ultimate balance between Pinot Noir and Chardonnay, the Dom Pérignon style traces, vintage after vintage, a complex structure made up of aroma and sensations, silky smooth, light as air and full of sensuality.

To quote Robert Parker again, "The brilliant 1996 Dom Perignon, which has largely disappeared from the marketplace, may be the finest young example of DP I have ever tasted. Notes of crushed rocks, honeysuckle, lemon oil, orange marmalade, and white pear provide a stunning aromatic display as well as palate impression. Great acidity and huge flavor intensity backed up by vibrant acidity make this an exquisite Champagne. It should drink well for 20-25 years, possibly longer."
