Full bodied and intensely flavoured but still very soft and 'open' with surprisingly well integrated, subtle oak. John O'Keeffe, our enthusiastic Office Manager and well-known 'bon-viveur' recently raved about a food/wine combination of this with Pie and Mash. 'It made the already smooth tannins melt away and almost disappear back into the generous weight of fruit', said John. No doubt shortly followed by John!
A 100% Cabernet Sauvignon from Carrizal del Medio in the Maipu Valley near Mendoza in Argentina where the vineyards are situated 800 meters above sea level. The 2005 harvest was exceptional with fine weather throughout permitting the optimum ripeness to be achieved and all the grapes were hand picked.
Cold maceration of the grapes for 18 days in stainless steel vats achieved colour and flavour and alcoholic fermentation was carried out at 27°C in stainless steel fermentation tanks using native yeast. Complete malolactic fermentation then followed.
The wine was then matured in oak for six months in small French oak barrels - 100% new oak which enhances the structure of the wine without overwhelming the flavour of the fruit. Once bottled the Cabernet rested for three months in a temperature controlled cellars.
The Antis Cabernet has a splendid deep ruby colour and aromas of cedar and spice. In the mouth, it is full bodied with rich soft layers of plum, blackcurrant and spices. It combines freshness of fruit, good concentration and the right amount of oak. It is well balanced with elegant tannins and a pleasant, persistent finish. Drink between 16-18° C.
